Carbohydrates have been given a bad rap over the last number of years but the reality is that we do need carbohydrates in our diet.  The type of carbohydrates we eat is what is the most critical decision that we need to make in order to have a well balanced diet and optimal health.  According to the Mayo Clinic, carbohydrates are vital to our health because they;
